GRAPE VARIETY: 97.5% Semillon, 2.5% Sauvignon Blanc

THE VINEYARD: Brookman Road, The Range, Adelaide Hills
The McLaren Range vineyards was one of the first vineyards planted in the Kaitpo sub-region of the Adelaide Hills and is considered one of the premier vineyards of the area. Very cold nights allow the fruit to ripen slowly and retain beautiful naturally acidity.

HARVEST: 1st April, 2017

WINE ANALYSIS: Alc/Vol: 12.3%, Acidity: 6.4 g/l, pH: 3.13

WINEMAKING: The Semillon was picked and whole bunch pressed; the free run transferred into two 2-3-year-old French barriques where it allowed to naturally complete fermentation. The pressings transferred to stainless steel and cold settled before fermentation. The two barrels were matured for 3 months, the lees retained and stirred monthly before carefully blending with a percentage of the stainless steel ferment. Contains minimal sulphites.

BOTTLING DATE: 3rd of July, 2017

NOSE: Intriguing citrus zest and dry flower aromatics, distinctively varietal to the Semillon grape. A hint of slightly riper tropical fruits in the background is contributed by the small percentage of Sauvignon Blanc.

TASTE: The palate is racy with a long and tight acid line and is evenly balanced by a mid-palate creamy texture of subtle toasted nuts, contributed from the time on lees in barrel. This wine is unapologetically savoury in nature, its subtle fruit core is lively and playful but wrapped prudently in a textured savoury cloak.
