The altitude and cold nights of the Hills ripens fruit slowly and gently and results in spicy lifted wines. McLaren Vale also experiences cool nights due to its close proximity to the coast but the days are warmer and the fruit has more opportunity to reach full flavour ripeness, resulting in fleshier, richer wines. We like to get the best of both worlds by blending vineyards from both regions to create Victor’s Place Shiraz.

WINE ANALYSIS: Alc/Vol: 14.7%, Acidity: 6.8g/l, pH: 3.50

WINEMAKING: Crushed then cold soaked, 15 to 17 days on skins, fermented in headed down open fermenters. Pressed into 4-10 year old seasoned French Barriques and matured for 9 months prior to bottling. Contains minimal sulphites.

NOSE: The nose exhibits cool climate white pepper spice and star anise, with riper black fruits and macerated olive skins from warmer vineyards. Many of our vineyards sit on ironstone geology and there is an iodine, almost bloody aromatic intrigue to this wine. Some developed characters of shoe leather and moist autumnal forest floor have also started to appear on the nose.

TASTE: The palate is multi-layered and complex. The initial primary fruit character which showed in this wine’s youth of dark brooding berries and fresh red plum are still evident but are now shared with an umami savouriness of black olive paste, ferrous crushed stone, and moist unlit cigar. There is a richness to the palate which is carefully balanced by a fine line of acidity.
